I am a adopted Korean in the US. I went back to Korea for the first time last year. I stayed with this korean family and they had their normal kitchen refrigerator/freezer. Then they had this separate Kimchee freezer is what they called it. It kept the temperature right at 0 or -1 C.  Apparently its the most ideal temperature for Kimchee and keeps it really fresh. The couple I stayed with were in their 60's, and she made everything from scratch including her own kimchee.  I have to say her kimchee was the best Ive ever had throughout Korea and even in the US.  She also made this other kimchee called Mooshin Kimchee? It was slices of Kimchee with slices of octopus and squid...it is my new favorite dish.</description>
