Tofu Soybean Paste Stew (Dubu Doenjangjjigae in Korean)

Doenjangjjigae is the most common stew in Korea. I would say most Koreans have it 2-3 times a week at least, but I am not one of them. :)
It is a such a simple meal to cook, but it is hard to make the deep taste like my mother does. Though I think I am getting better.

Ingredients for 2 people

(Expected Preparation time – 5 minutes, Cooking time – 8 to 10 minutes)Doenjangjjigae ingredients

  • 1/3 a 235g tofu
  • 1/2 a small size onion
  • 1/5 a zucchini
  • 3 shiitake mushrooms
  • 1 small size potato
  • 1/2 green chili
  • 1/2 red chili
  • Minced garlic – 1/4 tsp
  • Anchovy powder – 1tsp
  • Soybean Paste (Doenjang in Korean) – 1 tbsp
  • Water 350ml

Preparation

  1. Cut the tofu into medium size cubes.
  2. Thin slice the zucchini and cut it into quarter moons.
  3. Thin slice the potato and cut the slices in half.
  4. Thin slice the onion and mushrooms.
  5. Make a long cut in the middle of the chili and wash out the seeds in cold water (Make sure you don’t touch them. Scrub it out with spoon or knife, if it is necessary. It makes you sting all night if you touch the seeds.) Then thin slice it.

Cooking

  1. Pour the water into a pot.Doenjangjjigae making
  2. Add the anchovy powder and soybean paste. Dilute the soybean paste in the water. (I like to do this before the water boils, because it gets too hot to dilute near the heat later.)
  3. Boil it.
  4. Add the zucchini and potato. Boil it until 90% of them cook. (It takes about 2-3 minutes.)
  5. Add the onion, mushrooms, and tofu. Boil it for about 2 minutes.
  6. Add the garlic and chilies. Boil it for 1 minute.
  7. Serve it.
  8. You can scoop it out into the bowl or share the meal from the pot with other people.

Braised Baby Potatoes 1 (Algamja Jorim in Korean)

After cooking these baby potatoes, I was seriously thinking whether I should post this recipe or not. Because they didn’t look exactly how I expected.

However I didn’t want to waste all my effort to cook these braised baby potatoes by not posting the recipe. It was really hard work to rinse and scrub these little baby potatoes. So here is the recipe, but I am also planning on making a better version of this dish some other time, so check for that recipe as well.

Ingredients for 35 potatoesBaby potatose

  • Baby potatoes
  • Water
  • Cooking syrup (corn syrup or sugar cane syrup) – 2 tbsp

-Sauce (Mix them well in a bowl)

  • Soy sauce – 5 tbsp
  • Rice wine – 2 tbsp
  • Sugar – 2 tbsp

Preparation

1. Rinse the potatoes thoroughly – use soft scrubber to remove dirt if needed. (We are going to cook unpeeled potatoes.)

1. Put all the potatoes in a pot. Pour the water to cover half of the potatoes.

2. Boil it until the potatoes are 80% cooked.

3. Add the sauce in the pot and mix. Simmer them gently in the sauce on medium heat.

4. When the sauce is almost boiled away, add the cooking syrup, then lightly mix it well and turn off the heat quickly.

5. Serve it on the dish.

6. Put the rest of the potatoes in another container to eat later.

Seasoned sesame leaves pancakes (Kkaenip Jang Ddeok in Korean)

“Jang” is a kind of seasoning, like soy sauce (Gan jang in Korean), soy bean paste (Doen jang in Korean), or chilli paste (Gochu jang in Korean). Therefore “Jang Ddeok” means pancakes seasoned with some kind of sauce that I mentioned above. Its name can change depending on what kind of sauce, vegetable and meat you add in it.

Since I add sesame leaves the most, I will name this meal sesame leaves pancakes.

Ingredients for 2 people

  • Flour mix -1 cup : You can just use flour. (I got this flour mix for free when I bought something else. I can’t remember what it was though. It is a mix of flour, salt, sugar, corn powder etc. Usually you can get this for under 1500 won (Us $ 1.60))

  • Water -3/4 cup
  • Chili paste (Gochujang) -1 tsp
  • 5 sesame leaves
  • 1/4 a zucchini
  • 1 green chili
  • 4 stalks of spring onions
  • 1/4 an onion

Preparation

1. Thin slice the zucchini, onion, sesame leaves and diagonally slice the chili.
2. Cut the spring onions into medium size pieces.

3. Sieve the flour mix into a big bowl.
4. Add the water. Stir it.
5. Add the chili paste and mix it. Add all the vegetables.

  1. Pre heat the pan.
  2. Put some oil in (about 1 tbsp).
  3. Scoop out (one spoonful at a time) the mixed pancake, with a spoon, on to the pan.
  4. Turn them over when the bottom part cooks.
  5. When both sides cook, serve them on the plate.
  6. I usually serve them with a small bowl of soy sauce (mix with one dash of vinegar) for dipping. Or you can make some fancy dipping sauce like I made for squid pancakes.
