Teriyaki Sauce Marinated Chicken

I think I got the idea for this meal at my mother in law’s dinner. I just guessed what I am supposed to use. It is a bit sweet, but tender. My husband really liked it a lot. It is not quite Japanese style, so I suppose I will call this a Japanese fusion meal.

Ingredients for 3 people (If you are a big eater, it’s just right for 2 people)

For Marinating chicken

  • Chicken breasts 5 pieces
  • Refined rice wine 15 ml
  • Pepper 1 sprinkle
  • Sugar – 2 tbsp
  • Soy sauce – 2 tbsp
  • Korean Plum Extract 15 ml (It is optional, however it tastes a lot nicer.)chicken marinating

-Preparation

  1. Rinse the chicken with cold water.
  2. Cut the meat to small pieces.
  3. Put the meat into a bowl then, pour in the refined rice wine and sprinkle the pepper on top.
  4. Soak for about 15 minutes.
  5. Add some soy sauce, sugar, and plum extract into the meat bowl. Mix them well.
  6. Marinate this for about 30 minutes.

For salad

  • 5 medium leaves of lettuce
  • 1/5 of each of a small green and small red capsicum
  • 1 medium tomato
  • Honey mustard sauce

For steamed and pan fried veggies

  • 1 medium head of broccoli
  • 1 carrot
  • 2 King oyster mushrooms

-Preparation and Cooking

  1. Start with long slicing some carrots.marinated chicken prep
  2. Cut some broccoli.
  3. Then steam some carrots and broccoli for about 10 minutes each. Keep them in the pot until you’re ready to eat. (I recommend to steam them separately, however I was in a rush, so I steamed them together.)
  4. While it’s steaming, thin slice the mushrooms.
  5. Still while steaming the veggies, cut some lettuce into small strips, tomato into quarters,and thinly slice some capsicum.
  6. Put no.5 into a dish. The salad is then ready.
  7. Pan fry the mushrooms in a little oil until they turn brownish. (That’s the veggies now done).

Main dish – Chicken

  1. Pan fry the chicken (in a little oil). Turn the chicken pieces as needed until they turn brownish.
  2. Serve all the above on the plates.

Cheap and Convenient Meals from the Cafeteria

If you live near a university or big corporation, there is a high chance you can get some cheap meals.
In general, eating out in Korea isn’t that expensive, No, actually it is quite cheap since wages are so low in service industries. However meals at most universities and corporations are even cheaper.

I live near a corporation which is one of the biggest steel exporting companies in the world.
Sometimes when I don’t feel like cooking, I just drag my husband there. It’s open to the public as well. Dinner is 2500 won. (Lunch is 3000 won).

This is what I had couple of days ago.

The menu from the top left is: Fish cutlet with tartar sauce, Jeyuk-Bokkeum (Marinated pork with Gochujang sauce), Seasoned Cucumber, White rice, Squid and tofu mixed stew.
It was quite nice, especially for that price. Where else could you get this meal for 2500 won (About 2.60 US dollors)?

-How to buy meals at the cafeteria-

1. There is usually vending machines or a person who sells coupons. So you pay money to get a coupon. There are more choices of menus at universities. (At corporations you can’t choose the menu most of the time.)

2. Follow the crowds. (Not the food rubish emptying line :) )
If you can help yourself, like a buffet system, then you choose what you’re going to get (Kimchi is unavoidable). If you want some more, you can refill freely. (If they let you of course. Where I go it is very common.)

3. Enjoy the meal.

4. Make sure you empty your food scraps at the end in the bins provided (or put the tray in the place provided) – just follow everyone else.

Refined Rice Wine

I usually use Refined Rice Wine to get rid of the meat smell. However it contains natural succinic acid which apparently gives a refreshing taste as well.

It is 1.8 L. (about 6500 won, US $ 6.80)
I bought it a fairly long time ago, but I only use it for cooking purposes. So it lasts a long time. Its Korean name is “Chung-Ju“.

-Quick Korean lesson-

“Ju” (酒 in Chinese Chracter) means alcohol in Korean.

e.g. So-Ju, Maek-Ju (Beer), Poktan-Ju (boilermaker or mixed drinks in English)

Marinatied Pork Stir Fry with Gochujang sauce (Jeyuk-bokkeum)

“Jeyuk-bokkeum” is the Korean name for this meal. It’s marinated with Gochujang sauce so it may be spicy for you (just a warning). If you don’t have much time in terms of preparation (including marinating the meat), you don’t absolutely have to follow this recipe. I just can not guarantee the best result. That’s all.

Ingredients for this meals are (for 2 people)

For Marinating Pork

-Getting rid of smells

  • Pork 360g -You can use Neck bone meat (“Mok sal” in Korean) or Bacon slices from the Belly (“Samgyeopsal” in Korean)marinating pork with gochujang
  • Refined rice wine 15 ml
  • Pepper 2 Sprinkles
  1. Soak the Pork in cold water for about 20-30 minutes to get rid of the blood.
  2. Cut the meat into about mouthful size pieces.
  3. Put the meat in a big bowl and add refined rice wine and pepper. (mix and leave it for about 30 minutes)

-Making Gochujang sauce

  • Gochujang 2 tbsp
  • Soy sauce 1 tbsp
  • Sugar 2 tsp
  • Chili powder 1 sprinkle
  • Ginger powder 1/2 tsp
  • Finely chopped garlic (one medium size)
  • Plum Extract 15 ml -This is good for getting rid of oily tastes of the meat. You can buy it at the local super market. However it is very expensive, so you don’t have to use it, though it makes a very big difference in the meal I noticed.
  1. Get a bowl ready. Pour in all the ingredients I mentioned above.
  2. Mix them well. Then add this on to the meat.

For side vegetablesVeggies and adding

  • 1/5 of a medium cabbage (If you use too much of this, it will make too much water in the wok.)
  • 5 Sesame leaves
  • 1/2 a medium onion
  • 1/2 a medium carrot
  • 1 stalk of big spring onion

-Preparation

  1. Thin slice the cabbage, onion, and carrot.
  2. Slice the sesame leaves and spring onion.
  3. Put all these vegetables into the meat bowl (with the meat).
  4. Mix them throughly.

For wraps

  • Ssamjang
  • 1/5 of a medium size cabbage (I ‘m very fond of cabbage wraps. It’s soft and apparently helps digestion.)
  • 5 Sesame leaves
  • 10 Lettuce leaves

-Preparation

  1. Carefully wash the leaves. Since they are fragile and hard to scrub, I recommend to use organic leaves.
  2. Steam the 1/5 cabbage (unseparated) for about 10 minutes.

-Cooking-pan frying meat

  1. Pre-heat the wok for about 20 seconds.
  2. Put some olive oil in the wok.
  3. Add the veggies and meat mix.
  4. Stir them and cook it thoroughly.
  5. Serve it on the plate.

-Eating-

  1. To eat it, hold a lettuce, sesame, or steamed cabbage leaf on your hand.
  2. Put a mouthful of the meat and veggies on top.
  3. Add some Ssamjang.
  4. Wrap the leaf around it and then eat it.

Lotteria Lunch Time Menu on Sale

The other day I went to Lotteria with my friend. (Lotteria is a kind of Burger King.) I haven’t eaten a hamburger for over 1 year. The reason I don’t eat out for hamburgers is first, they don’t use good quality ingredients so it’s not healthy, and second it’s too expensive for the meal.

Anyhow they have released 3 burgers a couple of month ago, and as a promotion they sell those 3 new burger combos all for 4000 won each at lunch time. (Nearly 1000 won off the price, and Lunch Time is between 11am to 2pm).

I had the European Frico Cheese Burger Combo for 4000 won, and my friend had the Korean Bulgogi burger combo for 4000 won. We got two free cheese sticks as well thanks to their September promotion event. (If you ordered any of those three burgers, you can get it.)
The burger was a lot nicer than I expected and was very filling too. The cheese was especially nice. Apparently it’s a natural cheese from Holland. Whenever you buy a soft drink such as coke, sprite etc. (included with these combos) and eat in, you can get unlimited refills free of charge.
