Kimchi

One of the most common side dishes in Korea is Kimchi.
I don’t make Kimchi, because our household doesn’t consume enough to make it worth while.

This is what I buy at the supermarket usually (3,700 won for 500g, US $3.90). This one lasts me about 2 months. You can make soup, fried rice, etc with Kimchi.

Seasoned sesame leaves pancakes (Kkaenip Jang Ddeok in Korean)

“Jang” is a kind of seasoning, like soy sauce (Gan jang in Korean), soy bean paste (Doen jang in Korean), or chilli paste (Gochu jang in Korean). Therefore “Jang Ddeok” means pancakes seasoned with some kind of sauce that I mentioned above. Its name can change depending on what kind of sauce, vegetable and meat you add in it.

Since I add sesame leaves the most, I will name this meal sesame leaves pancakes.

Ingredients for 2 people

  • Flour mix -1 cup : You can just use flour. (I got this flour mix for free when I bought something else. I can’t remember what it was though. It is a mix of flour, salt, sugar, corn powder etc. Usually you can get this for under 1500 won (Us $ 1.60))

  • Water -3/4 cup
  • Chili paste (Gochujang) -1 tsp
  • 5 sesame leaves
  • 1/4 a zucchini
  • 1 green chili
  • 4 stalks of spring onions
  • 1/4 an onion

Preparation

1. Thin slice the zucchini, onion, sesame leaves and diagonally slice the chili.
2. Cut the spring onions into medium size pieces.

3. Sieve the flour mix into a big bowl.
4. Add the water. Stir it.
5. Add the chili paste and mix it. Add all the vegetables.

  1. Pre heat the pan.
  2. Put some oil in (about 1 tbsp).
  3. Scoop out (one spoonful at a time) the mixed pancake, with a spoon, on to the pan.
  4. Turn them over when the bottom part cooks.
  5. When both sides cook, serve them on the plate.
  6. I usually serve them with a small bowl of soy sauce (mix with one dash of vinegar) for dipping. Or you can make some fancy dipping sauce like I made for squid pancakes.

Tuna Pancakes (Chamchijeon in Korean)

Man, my hand are stinging from cutting hot chillies. Fortunately I didn’t rub my eyes with this hand. If I had, my eyes would sting too. I used chillies for some extra taste for tuna pancakes. I love the extra taste from chillies, even if it is hot. (I am a typical Korean concerning food.)

-Ingredients for 2 people

  • 2 eggs
  • 250g tuna
  • 3 stalks of small spring onions
  • 1/4 an onion
  • 1 red and 1 green chili
  • 2 tsp all purpose white flour
  • 2 sprinkles of salt

-Preparation tuna pancakes prep

1. Wash all the vegetables.

2. Cut the onion, spring onion, and each chili into fine pieces.

3. Break the eggs into a bowl and beat.

4. Pour all the vegetables and tuna into the bowl.

5. Add the flour and the salt into the bowl.

6. Mix them well.

-Cooking

1. Pre heat the frying pan.

2. Pour some oil.

3. Scoop the tuna and vegetable mix out with a spoon, and put it onto the pan (each spoonful makes one pan cake).

4. Turn it over when the bottom cooks.

5. Serve them on the plate.

I made about 12 pancakes with the ingredients.
Anyhow, after presenting the pancakes on the dish, I thought it would be nice to have dipping sauce with this. I made some dipping sauce (same recipe as last time, when I made dipping sauce for squid pancakes). With the sauce, it was truly excellent.
However you need to expect to smell like an onion. :)

I used these for the Dipping Sauce

  • Sugar 2 tsp
  • Soy Sauce 3 tsp
  • Water 3 tsp
  • Vinegar 3 tsp
  • Some Onion Pieces

Egg Omelet (Gyeranmari in Korean)

While I was waiting for Steamed Pork Ribs (Galbijim in Korean) to cook, I was starving. (By the way, I am going to talk about that recipe sometime soon.) So I decided to cook something quick and simple which turned out to be an egg omelet.

-Ingredients are egg omelet ingredients

  • 2 eggs
  • 1/6 of an onion
  • 3 stalks of small spring onions
  • 1 sprinkle of salt
  • 1 sprinkle of pepper
  • Some olive oil

-Preparation

  1. Break the eggs into a bowl. Whisk it well.
  2. Cut the onion and spring onion into little small cubes.
  3. Add the vegetables into the egg bowl.

-Cooking

  1. Pre heat the frying pan.
  2. Pour some olive oil. Make sure it covers the pan.
  3. Pour the mix of eggs and veggies.
  4. When the bottom of the omelet is nearly cooked, start rolling it over.

5. When it cooks, cut it into pieces to eat.
6. Serve it on the plate.

Fish Cake Stir Fry (Eomuk-Japchae in Korean)

I had some fish cake left over after cooking Ddeokbokki the other day.
It is quite a common side dish in Korea but I haven’t cooked this way before. Though it turned out much better than I expected.

Ingredients for 2 people
(expected preparation time :7 minutes, cooking time :5 minutes)

  • Square fish cake 2 sheetseomuk fry ingredients
  • 1/4 each of a red capsicum and a yellow capsicum
  • 1/2 an onion
  • 1/4 a carrot
  • 1/5 a zucchini
  • Some olive oil

-Seasoning sauce (mix these together in a bowl):

  • Soy sauce -1 tbsp
  • Corn syrup -1 tbsp
  • Refined rice wine -1 tsp
  • 1 small size squashed garlic
  • Sesame oil – 1 tsp

  1. Thin slice all the vegetables.
  2. Parboil the fish cake (for my husband, that means boil it very briefly). (To get rid of its oil :This is a new tip I learned yesterday.)
  3. Thin slice the fish cake.

-Cooking

  1. Pre heat the wok for about 20 seconds.
  2. Put some olive oil into the wok.
  3. Add all the vegetables (except capsicums)
  4. Stir it for about 3 minutes.
  5. Add capsicums and fish cake.
  6. Stir it for about 2 minutes.
  7. Add the seasoning sauce and stir it for about 1 minute.
  8. Serve it on the plate.

Tips :
I add some rice next to this dish and add some tomato sauce (ketchup)
It turned out to be a good, quick, and simple meal.
